What is the best method for cooking fresh pasta?

Fill a large saucepan with water (add a bit of salt to taste), then bring to a boil. Add the fresh pasta and stir to ensure a good separation. Return to a boil and start your timer while stirring the pasta from time to time. Cooking time after boiling is 1 to 2 minutes for spaghetti, radiatori, fusilli, macaroni, and 3 to 4 minutes for rigatoni, penne, linguini, casarecce, fettuccini, cavatelli, pappardella and lasagna. Taste the pasta to ensure it is cooked to your liking. Perfectly cooked pasta should be “al dente.” Once it is ready, strain the pasta and mix immediately with Pasta Bella sauce. Serve and enjoy!

How can I preserve pasta freshness and for how long?

To maintain freshness, our fresh pasta can be refrigerated for up to three days in its original packaging. If you notice condensation inside the package, consider transferring the contents to another bag or Tupperware container. This will allow you to keep the pasta for an additional two days in the refrigerator (0 to 4 ⁰C) and up to three months in the freezer. Tip: If you keep pasta cooked for later use or for cold salads, we suggest that you simply rinse in cold water, drain, add some oil and store in a refrigerator or airtight container.

How do I pair my pasta with the appropriate sauce?

When combining pasta with a sauce, remember that thin pasta, such as spaghetti, is best served with light sauces such as pesto and olive oil. Thicker pasta, such as fettuccini and pappardella, pairs well with thicker sauces such as rosée sauce and alfredo sauce. Hole-shaped pasta, such as rigatoni or radiatori, is perfect for meat or vegetable meat sauces, such as Gigi or Fiorentina sauce.

What is the best method for cooking frozen lasagna?

If you do not have enough time to completely defrost the lasagna before cooking as indicated on the label, simply cover it with foil and cook for 30 minutes. Remove the foil and continue cooking as recommended on the package. Lasagna is ready once it reaches a minimum of 71 °C, and after it acquires a golden color and the cheese is melted. We recommend letting the lasagna sit for 15 minutes before serving.
